
Air Fryer Buffalo Cauliflower

Air fryer buffalo cauliflower works because it does not need the vegetable to pretend it is chicken. The florets get a light flour-and-water batter seasoned with garlic and salt, then air fry at 400°F until that coating firms up and turns lightly golden. The useful detail is the batter consistency: thick enough to cling, loose enough for the excess to drip away, roughly like pancake batter rather than drywall compound.
Only after that first cook do the florets meet the buffalo sauce and melted butter. Saucing them early would soak the coating before it has a chance to crisp; saucing after the first fry lets the hot sauce grab onto a structured shell. Two more minutes in the air fryer sets that sauce onto the surface. Serve the cauliflower immediately with ranch or blue cheese, because the clock on crispness starts running as soon as it comes out. Ten minutes later it is still tasty, but it has begun remembering that it is a vegetable full of water.
