
Magic Lemon Pie
Par-bake a 9-inch pie crust, whisk sweetened condensed milk with egg yolks, lemon zest, lemon juice, and salt, then bake just until the edges set and the center still has a gentle wobble. Chill at least 4 hours.
Magic Lemon Pie gets its name from a very useful bit of kitchen chemistry: lemon juice thickens sweetened condensed milk almost immediately. Egg yolks reinforce that set in the oven and give the filling enough structure to slice cleanly after chilling without turning it into a heavy custard.
The filling does not need a long bake. In fact, overbaking is the fastest way to lose the silky texture. Pull the pie when the outer two inches are set but the center still moves slightly as a single unit, then cool it gradually and give it a full refrigerator chill before cutting.
