Reverse Sear: Exact Times by Thickness for Ribeye, Strip, and Filet

Low oven first, hard sear last. It's the most forgiving way to cook an expensive steak — but only above a certain thickness, and the carryover rules work backwards from what you know.

The Short Answer

Salt the steak and leave it uncovered on a rack in the fridge, ideally overnight. Cook it on a rack in a 250°F oven until the center hits 118°F for medium-rare — roughly 40 minutes at 1.5", 52 minutes at 1.75", 64 minutes at 2". Rest 5–10 minutes while a cast iron pan gets ripping hot. Pat bone dry. Sear 45–60 seconds per side in tallow or avocado oil, butter-baste the last 30 seconds, and serve immediately without resting again.

Minimum thickness: 1.5 inches. Below 1.25" the method has nothing to offer and traditional hot-and-fast is better.

There's a specific moment that turns people into reverse-sear evangelists, and it's the first cut. You've got a two-inch ribeye, you slice into it expecting the usual — a dark crust, then that pale gray band of overcooked meat, then finally the pink you were aiming for — and instead the color goes from crust straight to rose, edge to edge, like somebody painted it. No band. No gradient. It looks like a magazine photo, and you did it in your own kitchen with an oven and a skillet.

Then you tell everybody about it, and half of them try it on a three-quarter-inch supermarket strip and report back that it was fine but not magic. They're right. It wasn't. The method isn't magic — it's a specific solution to a specific problem, and if your steak doesn't have that problem, you get nothing.

Why It Works, In Order of Importance

Three real mechanisms, and they are not equally important. Most articles list them as though they are.

1. It eliminates the gray band

This is the whole reason. Everything else is a bonus.

When you drop a cold steak into a 500°F pan, you create a brutal temperature gradient. The surface is at 400-plus, the center is at 40, and heat conducts inward slowly through what is essentially wet protein. By the time the center climbs to 130°F, the layer a quarter inch beneath the crust has been sitting at 160-plus for minutes. That layer is the gray band, and it is overcooked, contracted, and dry. On a thick steak it can be a third of your meat.

A 250°F oven creates a gradient of maybe 120 degrees instead of 460. Heat moves in gently and the interior approaches equilibrium — the whole thing arrives at 118°F more or less together. When the steak finally hits the pan, only the outermost millimeter or two gets hot enough to overcook, and that millimeter is supposed to be crust anyway.

2. It produces a better crust, which surprises people

The intuition says a low oven is bad for browning. The opposite is true, because a low oven is a dehydrator.

Maillard browning requires surface temperatures well above the boiling point of water, and as long as there's free moisture on the surface, that moisture must boil off before the surface can climb past 212°F. Every second spent boiling water is a second not spent browning. Forty-five minutes on a rack in a 250°F oven with air circulating underneath strips that surface moisture off, so when the steak hits the pan it starts browning almost immediately instead of steaming for ninety seconds first.

The result is a crust that develops faster, goes darker, and — because you spend less time in the pan — costs you less interior. Add a salted overnight rest in the fridge and the surface is drier still.

3. It's marginally more tender

Cathepsins — the enzymes responsible for dry-aging — remain active up to roughly 122°F and work faster as they warm. A slow climb through the 90 to 120°F range gives them extra working time, which produces a small tenderness gain.

Real, but small. Don't choose the method for this. If anybody tells you reverse searing is like dry-aging your steak, they're overselling it.

The underrated fourth reason: it's forgiving

Traditional searing on a thick steak gives you a window of maybe ninety seconds between medium-rare and medium. Reverse searing gives you fifteen or twenty minutes, because the steak is climbing at roughly a degree a minute in a low oven instead of five degrees a minute in a hot pan. You can check it, walk away, check again.

On a forty-dollar ribeye, that margin is worth more than any of the science above.

The Thickness Threshold

Here's the rule nobody leads with: reverse searing is only worth doing at 1.5 inches or thicker. Ideally 1.75 to 2.

The logic follows directly from mechanism #1. The gray band forms because heat takes a long time to reach the center of a thick piece of meat. On a three-quarter-inch steak, the center is close enough to the surface that heat arrives fast — you're in and out of the pan in five minutes total, and there simply isn't time for a significant band to develop. You're solving a problem you don't have.

Worse, thin steaks are hard to control in the low phase. A 1-inch steak in a 250°F oven goes from 100°F to 130°F in a handful of minutes, so the window you were trying to widen closes again, and then the sear pushes you into medium-well before the crust is where you want it.

Adjustments: 225°F adds about 25% to the low phase. 275°F cuts about 15%. A bone-in steak runs about 15% longer — bone is a poor conductor and it shields the meat around it. Letting the steak sit out an hour first cuts roughly 12%.

These are estimates and the thermometer is the authority. Home ovens routinely run 25°F off their setting, racks vary, and a "two-inch ribeye" is often 1.8" at one end and 2.2" at the other. Use the chart to know when to start checking — roughly 70% of the estimated time — and let the probe make the actual call. A leave-in probe with a remote alarm turns this from a chore into a set-and-forget.

The Method, Step by Step

  1. Salt it early. Really early. Kosher salt on all surfaces, then uncovered on a wire rack in the fridge. Forty-five minutes is the absolute minimum — below that you're in the worst window, where salt has drawn moisture out but hasn't been reabsorbed yet. Overnight is better. Twenty-four to forty-eight hours is best, and the surface dries out beautifully, which pays off at the sear. Do not add pepper yet; it scorches in a hard sear. Pepper goes on after.
  2. Rack, sheet pan, 250°F oven. The rack matters — a steak sitting flat on a pan has one face that never dries and cooks unevenly against hot metal. Air underneath is the point.
  3. Probe it and walk away. Insert a leave-in thermometer horizontally into the center, or check with an instant-read starting at about 70% of the estimated time. Push past center and pull back slowly, taking the lowest reading. Avoid bone and any large fat seam — both lie.
  4. Pull at 118°F for medium-rare. Not 105, not 125. The pull temperatures in the calculator account for the fact that the sear itself adds heat. More on this below, because it's where most people go wrong.
  5. Rest 5–10 minutes while the pan heats. This rest isn't for the meat — the meat doesn't need it. It's for you: it gives you time to get cast iron genuinely hot, and it lets the surface dry a little more. Pat both faces bone dry with paper towels right before it goes in. Any surface moisture costs you crust.
  6. Sear hard and fast. Cast iron over medium-high for 5 to 8 minutes until it's just beginning to shimmer and smoke. A thin film of beef tallow, avocado oil, or grapeseed — something that won't smoke out at 450°F. Steak in, and don't move it. Forty-five to sixty seconds per side. Flip once, or flip every 30 seconds — frequent flipping is genuinely fine and heats more evenly, despite the folklore.
  7. Butter goes in at the end, not the beginning. In the last 30 seconds, add two tablespoons of butter, a smashed garlic clove, and a few sprigs of thyme. Tilt the pan and spoon the foaming butter over the steak. Butter added at the start just burns — its milk solids scorch around 300°F, and you're at 450.
  8. Sear the fat cap. On a strip or a ribeye, hold the steak on its edge with tongs for 30 seconds to render and brown the fat band. Most people skip this and it's the best bite on the steak.
  9. Serve immediately. Do not rest it again. This is the counterintuitive one and it's correct — see below.

The Carryover Trap

This is where people who know how to cook steak get reverse searing wrong, because they apply a rule that's true everywhere else and false here.

In traditional cooking, you pull meat well below target because carryover is large. A thick steak seared hard has an enormous heat reservoir near the surface, and that heat keeps migrating inward for several minutes after it leaves the pan. Pull a traditionally-seared 2" steak at 135 and you'll serve it at 142.

On a reverse sear, post-sear carryover is nearly nothing — maybe 2 or 3°F. The interior is already close to uniform, so there's no steep gradient left to drive heat inward. The sear only touched the outer couple of millimeters.

But — and this is the part that trips people — the sear itself adds about 10 to 15°F while it's happening. So the total rise from the moment you pull it out of the oven to the moment it's on the plate is roughly 12 to 15 degrees, and almost all of it happens in the pan, not on the cutting board.

Two practical consequences.

Don't pull at 105 out of habit. That's traditional-sear logic, and on a reverse sear it delivers a steak at 118 — solidly rare. If you wanted rare, great. If you wanted medium-rare, you missed.

Don't rest it after searing. Resting exists to let contracted muscle fibers relax so they stop squeezing liquid out under pressure. On a reverse sear the fibers never contracted violently in the first place — that's the entire point of the slow climb — so there's no pressure to release. Ten minutes under foil buys you nothing and softens the crust you just spent an hour engineering. Cut it and eat it.

On a Grill or Smoker

The method translates directly, and on charcoal it's arguably better because you get smoke during the low phase.

Two-zone charcoal: bank the coals to one side. Steak on the cool side, lid on, vents adjusted to hold 225–275°F. Same times as the oven, though grills leak heat and run less consistently, so lean on the thermometer harder. When it hits your pull temp, move it to the coals — or better, open the lid and let the coals flare, then sear directly over them for 45–60 seconds a side.

The cold-grate trick: keep a second set of grates off the grill so they stay cool. When it's time to sear, swap them in over the hottest coals. Cold grates don't leave the wide burnt bars that screaming-hot grates do, so you get more even browning across the whole face instead of stripes.

Smoker: 225°F with oak, hickory, or pecan during the low phase, then finish in cast iron indoors or over a chimney. A steak absorbs meaningful smoke in 45 minutes, and this is one of the best things you can do with a backyard smoker on a weeknight.

Chimney sear: light a chimney starter, set a grate directly on top, and sear over the column of heat coming out. It is absurdly hot — think 700°F — and it produces the fastest, hardest crust available to a home cook. Sixty seconds a side, maximum, and stand ready.

Sous vide wins on precision and loses on crust and effort. Reverse sear gets you 90% of the evenness with equipment you already own, and it actually beats sous vide on crust because a low oven dries the surface while a plastic bag does the opposite — sous vide steaks come out wet and you have to fight that before you can brown anything.

The one honest cost of reverse searing: less fond. A dry surface and a sixty-second sear don't leave much browned residue in the pan, so pan sauces are thinner and less flavorful. If a red wine reduction is the point of the meal, either build the sauce separately with stock and a little browned trim, or cook that steak traditionally and accept the band.

Seven Ways People Ruin It

1. Using a steak that's too thin

Under 1.25", there's no gray band to prevent and the low phase overshoots. You did an hour of work for a steak that a hot pan would have cooked better in six minutes.

2. Salting 15 minutes before

The worst possible window. Salt has pulled moisture to the surface but hasn't been reabsorbed, so you're searing a wet steak. Either salt immediately before it goes in the oven, or salt at least 45 minutes ahead — ideally the night before.

3. Not drying the surface before the sear

Paper towels, both faces, right before it hits the pan. Any free moisture has to boil off before browning can start, and boiling takes time you're spending on the interior.

4. A pan that isn't hot enough

Five to eight minutes of preheat, minimum. Cast iron heats slowly and unevenly — a pan that's been on medium-high for ninety seconds has a hot ring in the middle and cool edges. If the steak doesn't sizzle aggressively the instant it lands, pull it back out and wait.

5. Searing too long

The instinct is to leave it until the crust looks perfect, and on a properly dried steak the crust arrives in 45–60 seconds. Every additional 30 seconds is another few degrees you didn't want. If the crust isn't developing fast, the problem was the surface or the pan, and more time won't fix either.

6. Pulling from the oven at traditional-sear temperatures

105°F is the number people carry over from other methods. Here it delivers rare. Pull at 118 for medium-rare and let the sear do the last 12 to 15 degrees.

7. Resting it after the sear

Nothing to gain, crust to lose. The fibers never contracted hard, so there's no pressure to release. Cut it.

How long does it take to reverse sear a 2-inch steak?

What temperature do you pull a steak for reverse sear?

Different tradeoffs. Sous vide is more precise and essentially impossible to overcook. For most home cooks with a thick steak and an oven, reverse searing is the better return on effort.
