Ground beef, garlic, ginger, soy or another savory sauce, and a little sweetness create a fast skillet mixture with enough intensity that the lettuce is not being asked to carry the meal. Its job is simpler: stay cold, stay crisp, and keep the whole thing from feeling heavy. The beef needs actual browning before the sauce goes in. If you add liquid too early, it steams and turns into loose filling with all the charisma of cafeteria taco meat. Once browned, the sauce can reduce around it and cling to the crumbled beef. Crunchy toppings—scallions, carrots, peanuts, sesame seeds, whatever the recipe includes—make the texture more interesting than “hot stuff in leaf.” Use sturdy lettuce cups and do not overfill them. Everybody thinks they can beat lettuce physics until dinner is running down their forearm. Two or three spoonfuls, a little garnish, fold, eat. The contrast between hot savory beef and cold crisp lettuce is the entire point, and it makes a 20-minute dinner feel much fresher than the effort required.
