
Maple Balsamic Vinaigrette

Maple balsamic vinaigrette gets there with a pretty simple balance: balsamic vinegar for tang, real maple syrup for sweetness, Dijon mustard for bite and emulsifying power, minced shallot for a little sharpness, and extra-virgin olive oil to round everything out. The maple does not turn this into pancake dressing. It softens the vinegar just enough that you can use it on greens, roasted vegetables, grain bowls, chicken, or anything else that has been behaving a little too responsibly. Whisk the vinegar, maple, Dijon, shallot, salt, and pepper first, then drizzle the olive oil in slowly while whisking. That slow addition is what helps the dressing come together instead of becoming two liquids sharing an apartment but refusing to speak. Taste it before you call it done. More maple moves it sweeter; more balsamic brings the edge back. And because homemade vinaigrette has no interest in pretending separation is a moral failure, just shake the jar before using it. Thirty seconds later, everybody is back together and salad has a reason to exist.
