
Whipped Feta Dip
Blend feta, cream cheese, olive oil, lemon juice, and garlic in a food processor until smooth and whipped. Season with black pepper, spread onto a plate, and finish with a drizzle of olive oil.
Feta is delicious and also famously unwilling to become smooth on its own. Give it cream cheese, olive oil, lemon juice, garlic, and a food processor, though, and that crumbly block turns into a silky, salty dip with enough body to hold a swipe from warm pita. Blend longer than you think you need to, stopping to scrape the sides until no grainy pockets remain. Cream cheese softens feta’s sharper edges and gives the mixture structure; lemon keeps the richness from feeling heavy; garlic adds enough bite to make vegetables considerably more interesting. Finish with black pepper and another drizzle of olive oil. It takes about 15 minutes and looks far more composed than the amount of effort involved, which is exactly the kind of dishonesty I support in appetizers.
