Why Altitude Changes Everything
This is the one variable almost no boiled-egg chart accounts for, and it's the reason people who move from the coast to the mountains swear their eggs "just don't cook right anymore." Nothing changed about their eggs. The water changed.
Water boils when its vapor pressure matches the surrounding air pressure. At sea level, that happens at 212°F. Air pressure drops as you climb, so the water gives up and boils at a lower temperature — roughly 2°F cooler for every 1,000 feet of elevation. At 5,000 feet, your "boiling" pot is only about 203°F. It looks identical. Bubbles, steam, the whole show. It is just doing less cooking per second.
The egg doesn't know the difference between a vigorous boil at 212°F and a vigorous boil at 203°F — it only knows how much heat is actually reaching it, and at altitude that's less. Cold From the Fridge vs. Room Temperature
A fridge-cold egg has more thermal mass to overcome before cooking even really starts, so it needs a little more time than one that's been sitting out. The difference is small — around 30 seconds — but it's the difference between hitting your target and missing it by one stage.
There's a second reason room-temperature eggs are worth the wait if you have it: a cold egg dropped into boiling water experiences a bigger, faster temperature shock, and that shock is one of the more common causes of a cracked shell. It's not the only cause — a hairline crack that was already there, or a too-rough drop into the pot, will crack a room-temperature egg just as easily — but taking the chill off reduces the odds.

The Method, Step by Step
- Bring a pot of water to a full rolling boil first. Enough water to fully cover the eggs by about an inch, uncovered, over high heat. The eggs go in after the water is already boiling — this is what makes the clock trustworthy.
