How to Cook Rice So It Doesn't Turn to Mush (Every Type, Real Ratios)
Rice is two ingredients and it still goes wrong constantly, which tells you the problem was never the recipe.
The Short Answer
For most white long-grain rice: 1½ cups water per 1 cup rice, brought to a boil, covered, dropped to the lowest simmer, and left completely alone for 15 to 18 minutes. Turn off the heat and let it rest, still covered, for 10 minutes before fluffing. Brown rice needs roughly double the water and time.
Do not lift the lid while it simmers. That single habit causes more mushy and undercooked rice than any ratio mistake.

Does Rinsing Actually Matter?
Yes, but the effect is different than most people think. Rinsing doesn't wash away "dirt" — commercially milled rice is already clean. What it washes away is loose surface starch left over from processing, and how much that matters depends entirely on what you're making.

The Lid Rule, Explained Properly
"Don't lift the lid" sounds like superstition, but it's a real physical mechanism, not tradition for its own sake.
Once the pot is covered and simmering, it becomes a small closed system: a fixed amount of water, turning to steam, trapped above the rice, condensing and cycling back down. That trapped steam is doing real work — it maintains a stable, even temperature throughout the pot and keeps the moisture the rice needs to finish cooking from escaping before the grains have absorbed it.
Lift the lid, and steam escapes immediately. The pot's internal temperature drops, the total moisture available to finish cooking the rice decreases, and you've disrupted a process that was relying on staying closed and stable. When the heat turns off, the rice isn't actually finished — there's still moisture unevenly distributed through the pot, more concentrated at the bottom where it was in direct contact with the heat. The residual heat and trapped steam during those 10 minutes off-heat let that moisture even out across every grain, the same redistribution logic behind resting a steak or a roast.
Fluff and serve immediately, and you'll notice the bottom layer is wetter and softer than the top. Rest it, and the whole pot ends up uniform.

Brown rice keeps its bran layer — the outer coating that white rice has had milled away — and that layer is a real physical barrier to water.
