How to Thicken Any Sauce (Without Making It Weird)
Every sauce problem is really just liquid math with a confidence issue. Here is the arithmetic.
The Short Answer
There are only four real ways to thicken a liquid: reduce it, add starch, enrich it with fat or egg, or blend a solid into it. For a quick starch fix, start at 1 tablespoon cornstarch or 2 tablespoons flour per 1 cup of liquid for medium body, always whisked into cold liquid first, never dropped in dry.
Once you know which of the four you are actually doing, "my sauce won't thicken" stops being a mystery and starts being a checklist.
The Four Ways to Thicken a Sauce
Every thickening technique in every cuisine is a variation on one of exactly four mechanisms. Once you can name which one a recipe is using, you stop following instructions blindly and start understanding why they work.

Most real sauces use two of these at once — a pan sauce is usually reduction plus a butter mount at the end, and a good gravy is a starch network built on top of already-reduced pan drippings. Knowing the difference tells you which fix applies when something goes wrong.

Cornstarch, Done Right
Cornstarch is roughly twice as powerful as flour by volume, which is the only conversion you really need to remember. It gives a glossy, translucent finish rather than flour's matte opacity, and it works fast — a cornstarch sauce thickens in under a minute once it hits a simmer.
The failure mode is always the same one: adding it dry to a hot pot. Cornstarch granules gel on contact with heat, and a dry granule that gels on the outside instantly seals a raw, un-hydrated core inside a waterproof shell. That lump will not whisk out. Always whisk cornstarch into cold liquid first until it is fully smooth, then stream that slurry into the simmering sauce.
Cornstarch does not like being boiled hard or held for a long time. A hard boil after it has thickened will start breaking the starch bonds back down, and the sauce will thin out again — sometimes permanently. Bring it to a gentle simmer, let it thicken over 1 to 2 minutes, and then back the heat off.
Acidic liquids — citrus, vinegar, tomato — also weaken cornstarch's hold over time, which is part of why a sweet and sour sauce can seem thick right off the stove and looser twenty minutes later. Flour and Roux
Flour needs roughly twice the amount cornstarch does, and it needs real cooking time — at least 2 to 3 minutes at a simmer — to lose its raw, pasty taste. That is the whole tradeoff: flour is more forgiving of a hard boil and reheats and freezes far better than cornstarch, but it is slower and cloudier.
There are two ways to get flour into a sauce, and they are not interchangeable:
As a roux
Equal parts fat and flour, cooked together for a minute or two before any liquid goes in. This is the classic French method and it is what actually builds gravy, béchamel, and most cream soups. For a fast, last-minute fix, knead equal parts soft butter and flour into a paste with a fork — this is a beurre manié — and whisk it into a simmering sauce in small pieces, letting each one melt before adding more. A plain flour-and-cold-water slurry works too, though it is more prone to a raw-flour taste if the sauce doesn't simmer long enough afterward.
Arrowroot, the Acid-and-Dairy Exception
Arrowroot is the specialist of the group. It is roughly as potent as cornstarch, sometimes described as needing slightly less — a common rule of thumb is about two thirds the amount of cornstarch for the same body. Two things make it worth knowing about specifically:
- It holds up to acid. Where cornstarch weakens in citrus or vinegar-forward sauces, arrowroot stays stable, which is why it shows up in glazes and fruit sauces.
- It thickens at a lower temperature than cornstarch, so it is gentler on delicate sauces that can't take a hard simmer.
The tradeoff: arrowroot turns slimy if it's overcooked, and it does not hold up well in dairy-based sauces over sustained heat — it can go stringy. Use it for a bright fruit sauce or an acidic glaze; reach for cornstarch or flour for anything cream-based.
Reduction: The Thickener That Isn't a Thickener
Reduction adds nothing. That is the entire point, and it is why it is the cleanest thickening method there is — no starch, no cloudiness, no risk of a gluey texture. You are simply boiling water off, and everything that was dissolved or suspended in that water gets more concentrated as the volume drops.
Because nothing is added, flavor concentrates right along with texture. This is exactly why over-salted pan sauces happen so often — salt added at the start gets more concentrated as the liquid reduces, which is the same reasoning behind salting gravy and reductions at the end, not the beginning.
A wide, shallow pan reduces faster than a narrow, deep one, because evaporation happens at the surface — more exposed surface area means faster reduction. As a rough guide, reducing a liquid by half roughly doubles its concentration, though the exact thickening you get depends heavily on how much natural body the liquid already has from gelatin, sugar, or dissolved solids.
Cream, Butter, and Egg Yolk
These three do not thicken the way starch does, but they change a sauce's texture so convincingly that people often think they have. Worth separating clearly, because each one fails differently.
Butter (monter au beurre)
Whisking cold butter into a hot, reduced sauce off the heat creates a temporary fat emulsion that coats the palate and reads as "thick" even though nothing structural has changed. It is the finishing move on most restaurant pan sauces. Do it off direct heat, in small pieces, whisking constantly — too much heat breaks the emulsion and the butter slicks out on top instead of staying suspended.
Heavy cream

Egg yolk (a liaison)
Yolks add real thickening through gentle protein coagulation, plus richness no starch can match. The catch is that they scramble instantly in direct heat, which is why they always need to be tempered first — covered in the next section. This is the technique behind hollandaise, carbonara-style sauces, and classic French liaison-finished veloutés.
How to Make a Slurry That Doesn't Clump
This is the same lump physics that ruins gravy, and the fix is identical:
- Whisk the starch into cold liquid first, off heat, until completely smooth. Never add dry starch straight to a hot pot — the outside gels instantly and traps dry powder inside a shell that will not whisk out.
- Pour it into the sauce in a thin stream while whisking. Do not dump it all at once, even after it's a smooth slurry — a sudden temperature shock to a large volume of starch can still cause uneven thickening.
- Simmer gently, not a hard boil, for 1 to 2 minutes. The sauce should go from cloudy to glossy and visibly thicken. That visual change is your sign the starch has fully gelatinized.
- Stop there. Starch keeps thickening for a minute or two after it hits a simmer, so it is easy to overshoot by continuing to cook past the point it looked done.
Tempering, So the Eggs Don't Scramble
Egg yolks thicken a sauce beautifully and ruin it instantly if they meet direct heat unprepared. Tempering solves this by raising the yolks' temperature gradually before they ever touch the pot.
- Whisk the yolks in a separate bowl until smooth.
- Ladle a small amount of the hot liquid into the yolks while whisking constantly. A few tablespoons at a time is plenty — you are warming them, not cooking them.
- Repeat once or twice until the yolk mixture feels warm to the touch, not just room temperature.
- Pour the tempered yolks back into the pot, off high heat, whisking as you go.
- Cook over low heat, stirring constantly, until the sauce coats the back of a spoon. Never let it boil after the eggs go in — direct boiling curdles them even after tempering.
Why Sauces Break, Go Gluey, or Stay Thin
The sauce broke — fat or dairy separated
Almost always too much heat, too fast. Butter mounted over high heat, or cream added to a boiling pot, will split rather than emulsify. Pull the pan off the heat before adding cold fat, and add dairy gradually to a sauce that has come down off a hard boil.
It thickened, but it's gluey or pasty
Too much starch for the liquid, almost every time. It is much easier to add more thickener gradually than to fix an over-thickened sauce, so start light and build up rather than guessing high.
It tastes raw or starchy
Not simmered long enough after the slurry went in. Cornstarch needs about a minute of gentle simmering; flour needs closer to three. If the raw taste is still there, it just needs more time on low heat, not more starch.
It's full of lumps
Dry starch met hot liquid directly, or the slurry wasn't fully smooth before it went in. Always pre-mix in cold liquid, and if lumps happen anyway, an immersion blender or a pass through a fine-mesh sieve rescues it without starting over.
It was thick, then thinned back out while sitting
Classic cornstarch behavior after a hard boil, prolonged heat, or high acidity — the starch bonds break back down over time. If the dish needs to hold on a stove or in a warmer, flour or a roux is the more stable choice.
Fixing a Sauce That Already Went Wrong
Too thin: whisk 1 teaspoon cornstarch into 1 teaspoon cold water per cup of sauce that needs help, then stir it in and simmer briefly. If you have time instead of urgency, simmering uncovered to reduce works too, and concentrates flavor at the same time.
Too thick: thin it with small additions of warm stock, water, or wine, a splash at a time, whisking between each addition so you don't overshoot.
Broken (fat separated out): pull the pan off the heat immediately and whisk in a splash of cold liquid, or a single ice cube — the sudden cooling and agitation can pull an emulsion back together.
