Air Fryer Crispy Tofu

Jump to Recipe

Tofu gets blamed for being soft while people keep putting it into hot pans full of the water they never pressed out. That seems unfair. Air fryer crispy tofu starts with extra-firm tofu pressed for at least 15 minutes, then cut into 3/4-inch cubes and briefly marinated with soy sauce and sesame oil. Once the surface moisture is under control, cornstarch, garlic powder, onion powder, and black pepper coat the cubes. The cornstarch is doing real work here: it creates a thin dry layer that can turn golden and crisp instead of letting the tofu simply warm up and remain politely squishy.

Spread the cubes in a single layer at 400°F and shake the basket every five minutes so multiple sides get exposed to the circulating heat. After 12 to 15 minutes, the outside should be crisp and browned while the center stays tender. Finish with sesame seeds and scallions, then use it in rice bowls, noodles, salads, or anywhere a crunchy savory bite makes sense. It is also a useful reminder that tofu was never the problem. Asking a wet block of anything to become crispy without drying it first was the problem.

Pro Tips

  • Pressing the tofu is non-negotiable. Wet tofu steams instead of crisping.
  • Cornstarch is the secret weapon — it creates that shatteringly crispy exterior.
  • Extra-firm is the only tofu texture that works here. Soft or silken will crumble.

Substitutions

soy sauce → tamari or coconut aminos for gluten-free Same salty umami flavor without the wheat.
sesame oil → avocado oil if you want neutral flavor You lose the nuttiness but get a higher smoke point.
cornstarch → arrowroot powder Works the same way for crisping — slightly more neutral taste.

Storage Instructions

Refrigerate leftover crispy tofu in an airtight container for 3 to 4 days. Reheat it in the air fryer or oven so the cornstarch coating can crisp again; do not add liquid to the tofu before reheating.

Make Ahead

Press and cube the tofu ahead and measure the soy sauce, sesame oil, cornstarch, and seasonings separately. Marinate and coat the tofu shortly before air-frying so the cornstarch stays dry enough to form a crisp shell.

Freezing

Freezing the finished tofu is possible, but it works against the crisp cornstarch coating and changes the tofu texture. For this recipe, refrigerate leftovers and reheat them in the air fryer or oven so the exterior can crisp again.
