Cilantro Lime Dressing
Cilantro Lime Dressing blends a full bunch of cilantro with Greek yogurt, lime, jalapeño, garlic, and honey into a bright green drizzle for tacos, bowls, and salads.
This is the kind of dressing that can rescue a bowl of rice, grilled chicken, tacos, roasted vegetables, or a salad you assembled with excellent intentions and absolutely no plan for flavor. Fresh cilantro, Greek yogurt, olive oil, lime juice, jalapeño, garlic, honey, and salt go into the blender together and come out creamy, bright, green, and just spicy enough to remind you the jalapeño was invited.
Its consistency is adjustable instead of predetermined. Leave it thick for dipping or add cold water a tablespoon at a time until it falls from a spoon in a slow ribbon for dressing. Taste before adding more of anything: lime provides the sharpness, honey reins it in if necessary, and jalapeño can be increased when the first half-pepper turns out to have been raised in a very supportive household. Because the cilantro leaves and tender stems are blended completely, there is no need for delicate knife work or stripping every leaf like you are preparing herbs for a royal inspection. Ten minutes, one blender, and you have a sauce that tastes considerably more complicated than the amount of effort involved.
