Instructions

  1. 1In a bowl, toss the chicken thighs with 2 tablespoons olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. 2Set the Instant Pot to Saute and heat the remaining olive oil. Sear the chicken thighs for 2 to 3 minutes per side, just until lightly browned. Press Cancel.
  3. 3Add the chicken broth to the pot, scraping up any browned bits from the bottom. Lock the lid and set the valve to sealing. Cook on High Pressure for 8 minutes.
  4. 4Let the pressure release naturally for 5 minutes, then quick-release any remaining pressure. Check that the chicken reaches an internal temperature of 165°F; remove to a cutting board and let rest 5 minutes before slicing.
  5. 5While the chicken rests, whisk together the Greek yogurt, lemon juice, and dill for the sauce.
  6. 6Divide rice among bowls, top with sliced chicken, cherry tomatoes, cucumber, and feta, and drizzle with the yogurt sauce.
