BBQ Chicken Sweet Potato Bowls

Jump to Recipe

There is a point in the week when dinner stops being a creative pursuit and starts feeling like you are assembling evidence. These BBQ chicken sweet potato bowls are built for that exact night, except they still taste like somebody had a plan. Sweet potato cubes roast at 425°F with olive oil and smoked paprika while seasoned chicken cooks on the same sheet pan. The chicken gets brushed with barbecue sauce partway through, late enough that the sauce can caramelize around the edges without spending half an hour trying to become charcoal.

Once the chicken reaches 165°F, let it rest before slicing or shredding it. That five-minute pause keeps more juice in the meat and gives you time to deal with the cold half of the bowl: black beans, corn, diced red onion, cilantro, and another drizzle of barbecue sauce. Cut the sweet potatoes evenly—about 3/4 inch is the useful target—so one cube is not still fighting for its life while the one beside it has become orange mashed potato.

The finished bowl works because every forkful can be different: smoky chicken, sweet roasted potato, earthy beans, crisp onion, corn, and something fresh from the cilantro. It is colorful, filling, and suspiciously organized for a meal cooked mostly on one pan.

Ingredients

Servings
  • 2 large sweet potatoes, cubed
  • 2 boneless skinless chicken breasts
  • 1/2 cup barbecue sauce, plus more for drizzling
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1/2 red onion, diced
  • Fresh cilantro, for serving

Instructions

  1. 1Preheat oven to 425°F. Toss sweet potato cubes with olive oil, paprika, and half the salt. Spread on a sheet pan.
  2. 2Season chicken with garlic powder and remaining salt. Place on the same pan, leaving space around the potatoes.
  3. 3Roast 15 minutes. Brush chicken with barbecue sauce and continue roasting 10 to 12 minutes until chicken reaches 165°F and sweet potatoes are tender. Cook poultry until the thickest piece reaches 165°F on an instant-read thermometer.
  4. 4Let chicken rest 5 minutes, then slice or shred.
  5. 5Build bowls: sweet potatoes on the bottom, topped with sliced chicken, black beans, corn, red onion, cilantro, and extra barbecue sauce.

Pro Tips

  • Cut sweet potatoes into even 3/4-inch cubes so they roast evenly and finish at the same time as the chicken.
  • Brush the sauce on halfway through so it caramelizes without burning.
  • Shredding the chicken with two forks lets the sauce get into every bite.

Substitutions

sweet potatoes → regular potatoes or cauliflower rice Both work as the base with different texture.
barbecue sauce → teriyaki sauce for an Asian twist Different flavor profile, same bowl concept.
chicken breasts → rotisserie chicken, already cooked Saves 25 minutes. Just warm the shredded meat in barbecue sauce.

Storage Instructions

Store assembled bowls in the fridge for up to 4 days. Great for meal prep.

Make Ahead

Roast the sweet potatoes and chicken ahead. Store separately and assemble bowls when ready.

Freezing

Yes. Freeze the cooked chicken, roasted sweet potatoes, black beans, and corn in meal-size portions. Keep fresh toppings and extra barbecue sauce separate, thaw the bowl components in the refrigerator, and reheat before assembling.
