But after it rises and gets cut into bite-size pieces, each piece takes a 30-second trip through boiling baking-soda water before it ever sees the oven.
That alkaline bath is what helps create the deep brown exterior and unmistakable pretzel flavor. Skip it and you have pleasant bread nuggets, which is not a tragedy, but it is also not why anybody warmed ten cups of water. After boiling, the bites get egg wash, coarse salt, and 12–15 minutes in a 425°F oven until the tops are deeply golden. The contrast is the whole point: a chewy, browned outside with a soft center that still has some pull. Serve them warm with mustard or cheese sauce, ideally in a bowl large enough that nobody can accurately determine how many you personally ate. Pretzel bites are small, and small food has enjoyed legal immunity from counting for generations.
