Sausage cream cheese crescent bites are firmly in that second category: browned breakfast sausage mixed with softened cream cheese, tucked into crescent dough, brushed with egg, and baked until the outside is puffed and golden.
The filling works because the sausage brings salt, spice, and browned flavor while the cream cheese turns all those crumbles into something cohesive enough to stay inside the dough. Let the cooked sausage cool slightly before mixing so the cream cheese softens without melting into soup, and resist the urge to cram extra filling into each triangle. Overfilled crescent dough has the structural integrity of a lawn chair at a family reunion — sooner or later, something is coming out the side. A tablespoon is plenty. Everything bagel seasoning adds a crisp, savory finish, but the real payoff is the contrast between flaky pastry and the creamy sausage center.
