Cheese Ball with Pecans
Beat cream cheese smooth, mix in cheddar, green onion, Worcestershire, and seasonings, then shape and chill for at least 2 hours. Roll the firm cheese ball in toasted pecans and parsley before serving with crackers.
A good cheese ball should spread on a cracker without requiring the upper-body strength normally reserved for opening a stuck pickle jar. That is why this one starts with fully softened cream cheese, then folds in sharp cheddar, green onion, Worcestershire, garlic powder, onion powder, and a little cayenne. The mixture gets chilled until firm enough to hold its shape, but it comes back toward room temperature for about 15 minutes before serving so the inside is creamy rather than refrigerated masonry.
The pecan coating does more than make it look like you planned ahead. Toasting the nuts gives them a deeper, almost buttery flavor and a crisp texture that plays against the soft cheese; parsley adds freshness and keeps the whole thing from looking like a festive asteroid. Press the coating on after the cheese ball has chilled, then park it in the middle of a plate with plenty of crackers.
This is unapologetically party food: salty, sharp, a little tangy, a little spicy, and built to be made ahead. Leave it overnight if that helps your schedule. The flavors settle in while you do something more important, like pretending you were always going to clean the living room before people came over.
