
Mini Chicken Quesadillas
Cook diced chicken with chili powder, cumin, and garlic powder, add bell pepper and green onions, then fold the filling with cheese into small tortillas. Pan-crisp the quesadillas 2 to 3 minutes per side and slice each one into wedges.
Mini quesadillas have one major advantage over full-size quesadillas: nobody has to pretend they are only going to eat one. Diced chicken cooks quickly with chili powder, cumin, garlic powder, salt, and pepper, then gets tossed with red bell pepper and green onion before being folded into six-inch tortillas with plenty of shredded cheese. Because the chicken is cut small, it cooks in seven to nine minutes, but still check that it reaches 165°F. After that, the skillet gets wiped out and the folded quesadillas go back in with a little oil, two to three minutes per side. The goal is a tortilla with crisp golden patches and cheese melted enough to hold the filling together without turning the whole thing into a dairy landslide.
Let them rest for a minute before slicing. That tiny pause makes the wedges cleaner and gives the cheese just enough time to stop behaving like lava. Serve with salsa, sour cream, guacamole, or all three if nobody is auditing the table. They work as an appetizer, game-day food, kid dinner, or the kind of snack you keep “testing” until suddenly the platter has a suspiciously empty corner.
