Prep-Ahead Moves
- Thursday night: start the buttermilk brine for Friday’s chicken-fried steak. It needs the time.
- Grate all the cheddar for Tuesday in one go — pre-shredded bags have anti-caking starch that dulls the sauce.
- Chop onion and celery for Wednesday and Thursday at the same time; store separately.
Leftover Strategy
- Chicken and dumplings thickens overnight — thin with broth when reheating, not water.
- Leftover black pepper gravy over toast is a legitimate Saturday breakfast. This is the South.
