
Roasted Cabbage with Brown Butter Breadcrumbs
To make Roasted Cabbage with Brown Butter Breadcrumbs, roast thick cabbage wedges at high heat until the edges char and caramelize, then top them with breadcrumbs toasted in nutty brown butter, Parmesan, and a squeeze of lemon.

Watch the butter closely. Brown butter has a very small window between “hazelnuts and heaven” and “someone set a wallet on fire.” Once the color deepens and the aroma turns nutty, move on to the breadcrumbs.
