Turkey Apple Cheddar Wraps
Jump to RecipeTurkey, cheddar, and apple work for the same reason a good cheese board works: salty meat, sharp cheese, crisp fruit, and something sweet-tangy to connect them. Here that connector is honey mustard, spread over flour tortillas before the turkey, cheddar, Granny Smith apple, spinach, and walnuts go on.
The apple is doing more than adding sweetness. Its crunch keeps a cold wrap from becoming one continuous soft texture, and its acidity works especially well with sharp cheddar. Roll the tortillas tightly by folding the bottom up, tucking in the sides, and rolling forward so the filling stays put in a lunch bag. If you are packing them ahead, keep the apple slices thin and the spinach dry. A wrap should survive lunch intact. It should not open in the foil like a suitcase inspected by airport security.
