Turkey Taco Meal Prep Bowls
Jump to RecipeMeal-prep bowls succeed or fail on Wednesday, not Sunday. Anything can look organized in matching containers when it is freshly made. The real test is whether seasoned turkey, rice, black beans, corn, tomatoes, avocado, cilantro, and lime still sound like lunch after two days in the refrigerator.
Brown the ground turkey to 165°F, then simmer it with taco seasoning and a little water until the seasoning coats the meat instead of sitting dusty on top. Warm the beans and corn, portion everything over rice, and keep avocado and lime separate until serving if you want the freshest texture. Tomatoes can go in cold; cilantro is best added later if you are picky about wilted herbs.
The bowl reheats well because the hot components are simple and the fresh components are modular. In other words, this meal prep understands boundaries, which is more emotional maturity than I usually expect from a plastic container.
