Greek Beef Pita Bowls

Jump to Recipe

A pita bowl is what happens when you want all the good parts of a gyro-adjacent dinner but do not feel like negotiating with an overloaded piece of flatbread. Seasoned ground beef brings the warm, savory center; cucumber, tomato, red onion, and greens bring crunch and freshness; and a cool yogurt-based sauce pulls the whole thing back into balance. The beef works because it is seasoned while it cooks instead of being treated like plain taco meat with a passport. Garlic, oregano, lemon, and the browned bits from the skillet build a flavor profile that can stand next to briny feta and fresh vegetables without disappearing. Let the meat actually brown before breaking and stirring it constantly. Gray beef tastes like somebody was afraid of the stove.

From there, the bowl is flexible in the useful way. Warm pita can be tucked alongside, torn over the top, or used to scoop up whatever refuses to stay on the fork. The contrast is the whole reason this works: hot beef, cold vegetables, creamy sauce, salty feta, soft pita. It feels like a composed meal even when you assembled it in the same bowl you usually use for cereal at 10:30 at night.

Ingredients

Servings
  • 1 pound ground beef (85/15)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice or warm pita, torn into pieces, for the base
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/2 cup plain Greek yogurt
  • 1 clove garlic, minced (for the sauce)
  • 1 tablespoon lemon juice (for the sauce)
  • 1 tablespoon chopped fresh dill (for the sauce)

Instructions

  1. 1Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and no longer pink, 6 to 8 minutes, draining excess fat if needed.
  2. 2Stir in the oregano, cumin, garlic powder, salt, and pepper and cook for 1 minute more, until fragrant.
  3. 3While the beef cooks, make the sauce: whisk together the Greek yogurt, minced garlic, lemon juice, and dill in a small bowl. Season with a pinch of salt. Cook ground meat until it reaches 160°F on an instant-read thermometer.
  4. 4Divide the rice or torn pita among bowls as the base.
  5. 5Top each bowl with the seasoned beef, cherry tomatoes, cucumber, red onion, olives, and feta.
  6. 6Drizzle with the yogurt sauce and serve immediately.

Pro Tips

  • Drain excess fat from the ground beef after browning so the bowls don't turn greasy under the sauce.
  • Make the yogurt sauce first so the flavors have a few minutes to meld while the beef finishes cooking.
  • Salt the cucumber lightly and let it sit for a few minutes if you want less water pooling in the bowl -- pat dry before adding.

Substitutions

ground beef → ground lamb or ground turkey Ground lamb leans more traditional; ground turkey is a leaner option with the same seasoning.
Greek yogurt → sour cream, thinned with a splash of milk Slightly tangier than yogurt but works well in the sauce.
feta → crumbled goat cheese A milder, creamier alternative.

Storage Instructions

Refrigerate components separately in airtight containers for up to 4 days; assemble bowls fresh.

Freezing

The cooked, seasoned beef freezes well for up to 3 months; the fresh vegetables and yogurt sauce do not freeze well.
